Roz Purcell is serving up some Proper Chips, her new favourite Strong Roots product. They are so good- chunky, crispy and fluffy with only 2 ingredients they are a paler chip but it's just like you've made them yourself just without the fuss! In this recipe she will show you how to make the chips & also sharing a few of her favourite ways to eat them- with garlic mayo, curry sauce and good old fashioned salt and vinegar!

Preheat your oven to 200C (400F).

Place proper chips onto a baking tray and cook for 25 minutes.

For Garlic Mayo - 100g cashews soaked in water for 2 hours (drained) - not necessary if you have a very high speed blender

Add Juice of 1 lemon , 2 cloves of garlic ,50 ml water, Pinch of sea salt

For Curry Sauce - 1.5 tbsp curry powder, 350ml almond milk ,3 tbsp smooth almond butter , 1 tbsp tamari/ soya ,1 tbsp tomato paste
