The Pumpkin & Spinach Satay Peanut Butter Toast

Peanut butter toast is not just for breakfast...and these toasts topped with The Pumpkin & Spinach are definitely not just for lunch.

Ingredients

  • For a quick peanut butter satay spread:
  • 60g peanut butter
  • 10g maple syrup or honey
  • 1 tbsp soy sauce or tamari for gluten free
  • ½ tbsp curry powder
  • method (tick as you go)

    Preheat your oven to 200C (400F).

    Cook burgers according to packet instructions.

    Mix together all ingredients in a bowl

    Spread on your favourite sourdough bread, toasted.

    Top with The Pumpkin & Spinach, some pickled red onion, spinach leaves and a few pomegranate arils for a pop of crunchy freshness.
