Mediterranean Loaded Fries with Chickpeas

 These loaded Mediterranean Fries are topped with chickpeas, diced tomatoes, garlic, lettuce, lemon & Tzatziki sauce. This dish makes a fun appetizer, but it's satisfying as a main dish, too! The perfect summer loaded fries recipe.

Preheat your oven to 200C (400F).

Place Proper Chips on a baking tray and cook in the oven for 20 - 25 minutes.

Mix together tzatziki ingredients in a bowl and set to one side. Can be prepared in advance and stored in the fridge for a couple of days.

Mix together chickpeas, olive oil, garlic, tomato and lemon juice in a bowl. Season to your own taste with salt and pepper.

Layer proper chips up with romaine lettuce, chickpeas and tzatziki. Garnish with some pickled onion and parsley if desired.
