This is an amazing BBQ'ed salad that you have to try. We have spiced chargrilled aubergines, our crispy Spinach Bites, juicy pomegranate seeds and a deliciously creamy tahini dressing. The different textures and flavours will have you making this all across the summer months and the best part? It's so easy!
Ingredients
method (tick as you go)
Pre-heat the BBQ to a medium temperature.
Add the Spinach Bites to the BBQ and cook for 6 minutes on each side.
Toss the aubergine slices in a large bowl with the cumin, olive oil and lemon zest.
Place on the pre-heated BBQ and cook for 3 minutes per side.
Place all the citrus tahini ingredients into a food processor and blend.
Arrange the cooked aubergine slices on a platter, place the Spinach Bites on top and drizzle over the citrus tahini dressing, sprinkle with pomegranate seeds.
