Garlic Roasted Sweet Potato, Carrot, Orange And Cumin Salad

IT'S OFFICIALLY SUMMER! We have the perfect bright and zesty salad to kick start this wonderful season! Subtly spiced with hits of sweetness from our Garlic Roasted Sweet Potato and hits of zingy orange, this salad is a must try summer dish!


  • 1 bag of STRONG ROOTS Garlic Roasted Sweet Potatoes
  • 3 large carrots, grated
  • 1 orange segmented
  • 1 orange juiced
  • 1 handful of raisins
  • 1 handful of nuts, chopped
  • 1 tsp of cumin seeds
  • Salt & pepper
  • Dressing:
  • 4 tbsp of olive oil
  • 2 tbsp of apple cider vinegar
  • 1 tsp of Dijon mustard
  • 1 tsp of maple syrup
  • 1 clove of garlic, minced
  • Salt & pepper

    Preheat the oven to 200°C.


    Place STRONG ROOTS products on a baking tray and cook as per instructions on the bag


    In a large bowl grate the carrots, segment and juice the oranges and combine. Then add the cumin seeds and raisins


    In a bowl combine the ingredients for the dressing, mix until it has become emulsified. Season to taste


    Remove STRONG ROOTS Garlic Roasted Sweet Potatoes from the oven and let cool briefly.


    Drain some of the excess liquid from the carrot and orange mixture.


    Combine the STRONG ROOTS Garlic Roasted Sweet Potatoes with the carrot and orange mixture and serve in your favorite dish.


    Spoon over the dressing and garnish with chopped nuts, orange zest and cumin seeds
