Preheat your oven to 200C (400F).
Place Proper Chips on a baking tray and cook in the oven for 20 - 25 minutes.
Mix together tzatziki ingredients in a bowl and set to one side. Can be prepared in advance and stored in the fridge for a couple of days.
Mix together chickpeas, olive oil, garlic, tomato and lemon juice in a bowl. Season to your own taste with salt and pepper.
Layer proper chips up with romaine lettuce, chickpeas and tzatziki. Garnish with some pickled onion and parsley if desired.
