Soy and Honey Tofu Skewers by Alice Liveing

  • Sauce:
  • 50ml honey⁣
  • 2tbsp toasted sesame oil ⁣
  • 2tbsp rice vinegar
  • Handful of coriander
  • Skewers:
  • 200g firm tofu, cut into cubes ⁣
  • 1 courgette, cut into large cubes ⁣
  • 1 aubergine, cut into large cubes ⁣
  • 1 red onion, sliced into wedges ⁣
  • 6 wooden skewers ⁣
  • Chopped asparagus
  • method (tick as you go)


    Preheat the oven to 200°C.


    Place the Sweet Potato Fries on a baking tray and cook as per instructions on the pack.


    Mix up 3/4 of your marinade and then coat on to tofu and leave to sit for around 30 mins.


    Place your tofu and veggies on to your skewers and drizzle over the remaining marinade.


    Place onto a baking tray and place under the grill to cook for a around 10 minutes.


    While your tofu is cooking, for a little extra veg, add your olive oil to a pan and then place asparagus to fry for a few minutes.


    Serve your tofu skewers with your Oven Baked Sweet Potato Fries, grilled asparagus and then finally sprinkle over your coriander.
