Meanwhile, add beans to a pot with salt, cumin, coriander and chili powder, and heat through.
Mix tomato and onion in a bowl with a dash of lemon juice. Season with salt and pepper.
Mix avocado and lime juice and as with the tomatoes, season with salt and pepper to taste.
Assemble cooked hash browns with beans, mashed avocado, and crème fraîche and dig in!
Bonus tip: you can also add a dash of hot sauce and vegan cheese on top if desired.
