Salade de patates douces rôties à l'ail, carottes, orange et cumin

C'EST OFFICIELLEMENT L'ÉTÉ ! Nous avons la salade lumineuse et piquante parfaite pour démarrer cette merveilleuse saison! Subtilement épicée avec des touches sucrées de notre patate douce rôtie à l'ail et des touches d'orange piquante, cette salade est un plat d'été incontournable !

Ingrédients

  • 1 bag of STRONG ROOTS Garlic Roasted Sweet Potatoes
  • 3 large carrots, grated
  • 1 orange segmented
  • 1 orange juiced
  • 1 handful of raisins
  • 1 handful of nuts, chopped
  • 1 tsp of cumin seeds
  • Salt & pepper
  • Dressing:
  • 4 tbsp of olive oil
  • 2 tbsp of apple cider vinegar
  • 1 tsp of Dijon mustard
  • 1 tsp of maple syrup
  • 1 clove of garlic, minced
  • Salt & pepper

    Preheat the oven to 200°C.

    Place STRONG ROOTS products on a baking tray and cook as per instructions on the bag

    In a large bowl grate the carrots, segment and juice the oranges and combine. Then add the cumin seeds and raisins

    In a bowl combine the ingredients for the dressing, mix until it has become emulsified. Season to taste

    Remove STRONG ROOTS Garlic Roasted Sweet Potatoes from the oven and let cool briefly.

    Drain some of the excess liquid from the carrot and orange mixture.

    Combine the STRONG ROOTS Garlic Roasted Sweet Potatoes with the carrot and orange mixture and serve in your favorite dish.

    Spoon over the dressing and garnish with chopped nuts, orange zest and cumin seeds
